Warning: Today’s blog post is going to be short because, as the title hints at, I’m feeling particularly lazy today.
If you’re on TikTok at all (and even if you’re not, the mainstream news outlets will make sure that you get to learn the latest TikTok trends a few months after they make their appearance on social media), then you’ve probably seen what’s being labeled as “girl dinner.”
Girl dinner is essentially a mix-and-match style dinner when you’re not feeling up to churning your own butter, baking your own bread, and creating a nine-course dinner from scratch. The gender doesn’t matter, and obviously, and that problematic trend label is probably just there in an effort to make a video go viral on TikTok.
Regardless, the point of such a quick dinner is to just throw what you have together for your single-person meal. Whip together some olives, crackers, hummus, cheese, deli meats, and you’re done. While you could just call that a charcuterie board, the point of these thrown-together meals is not that they’re always the same, but that they could be put together with whatever you have on hand, and the meal doesn’t require too much effort. Maybe you have some kimchi, peanut butter, chili oil crisp, cucumbers, and some whole wheat naan bread in the back of your fridge. Maybe you have some kettle corn PopCorners, some cheddar cheese, some cornichon pickles, and dried apricots and honey. Throw them all together, and voila -- dinner is served!
Or maybe, this is not really a thing and all, and sometimes we’re all just very tired, and we just throw together what we have and scarf it down because we’re hungry. It’s not gourmet. It’s not made-from scratch, it’s just quick and easy sustenance. For me, after having a migraine and feeling super tired today, I just popped in a serving of Trader Joe’s reduced-guilt (note the slightly toxic marketing on that labeling) mac and cheese into the microwave, a frozen veggie samosa into the toaster oven, and sliced some tomatoes and topped them with a sprinkling of salt to have on the side. Was it a fully balanced meal? No. Was it easy to make and satisfying after a long day of working with a migraine? Yes.
