I’m not a super religious person, but I do love celebrating new beginnings after long winters. Being with family, talking and eating and laughing, it’s a wonderful way to spend a long and lazy Sunday.
For our Easter dinner, we cooked ham, made parmesan-pea risotto, home-baked bread, and roasted asparagus and carrots. We did learn that waiting until the last minute to pick out a ham meant that we were left with a gigantic ham that wouldn’t fit into any of our stock pots, but we made do with a roasting pan and a tent made out of foil.
When we first started going to family Easter dinners, we’d dress up to the nines and use fancy plates and stemware. The pandemic has really rejiggered a lot of our hosting priorities. Now we’re just fine using paper plates and the name of the fashion game at our house is comfort.
There isn’t much time for a blog post today, but I am so thankful to be with my family, and despite the craziness of dinner preparations, breaking bread with family members is always a pleasure that I look forward to.
